As a Pastry Commis, you will be part of our talented Pastry Brigade, supporting the creation of refined, beautifully crafted desserts and pastries that reflect the Four Seasons standard of excellence. You will contribute to daily production, mise en place, plating, and preparation for outlets, banquets, in‑room dining, and employee dining. You will maintain impeccable standards of quality, consistency, and presentation while ensuring a safe, hygienic, and well‑organized work environment. With creativity, curiosity, and passion for pastry, you will help bring to life memorable sweet experiences for both guests and employees.
Job Responsibility:
Support the pastry team in the preparation, baking, and finishing of pastries, desserts, breads, and viennoiserie, following recipes and presentation guidelines
Ensure all products meet Four Seasons quality standards in taste, texture, craftsmanship, and visual presentation
Maintain a clean, safe, and sanitary work environment, complying with HACCP procedures and internal quality protocols
Properly label, date, and rotate all food items
ensure perishables are stored at the correct temperatures
Assist in daily mise en place, monitoring pars and communicating production needs to the Pastry Chefs
Follow inventory guidelines and support efforts to reduce food waste through smart preparation and careful portioning
Contribute ideas for new pastries and dessert experiences, supporting menu evolution and seasonal creations
Collaborate with the culinary team for banquet production, amenity preparations, and restaurant service needs
Participate in team learning, support junior colleagues, and foster a positive, cooperative kitchen culture
Handle equipment responsibly and report maintenance or safety issues promptly
Uphold Four Seasons grooming standards, professionalism, and the philosophy of genuine hospitality through every detail delivered
Requirements:
Previous pastry experience in a luxury hotel, fine dining restaurant, or professional pastry environment
Fluency in English and Italian
A creative flair, bringing your personal touch, passion, and energy to enhance all culinary experiences
Strong organizational skills, attention to detail, and the ability to work efficiently in a fast‑paced environment
Commitment to maintaining the highest hygiene, safety, and quality standards
A collaborative attitude and a genuine passion for food, craftsmanship, and continuous learning
