Job Description:

We are looking for a motivated Commis Chef to join our Culinary team based in our kitchen focused around Italian cuisine, The Attic Osteria.

Job Responsibility:

  • Cooking and preparing elements of high-quality dishes
  • Assisting other Chefs as and when required
  • Contributing to maintaining kitchen and food safety standards
  • Preparing meal ingredients, which includes seasoning of different meats as well as washing, peeling, and chopping vegetables and fruits
  • Preparing salads and sauces as directed by the Chef de Partie
  • Receiving deliveries and verifying that all ordered items have been delivered and are of good quality
  • Taking inventory of restaurant supplies and notifying the supervisor of low or depleted supplies
  • Discarding all expired and spoiled food items stored in the stock rooms, refrigerators, and freezers
  • Performing basic cleaning duties and ensuring that workstations are properly sanitised
  • Plating and presenting meal items as per the Chef de Partie’s instructions
  • Assisting and monitoring stock, including stock rotation, ensuring minimum kitchen wastage

Requirements:

  • Stays up to date with current food trends and best practices
  • Must be able to work flexibly including evenings and weekends
  • Excellent communication skills and comfortable talking to colleagues, senior management, and coming front of house to talk to members
  • A genuine passion for hospitality and hosting

  • Prepare food items according to guest orders and maintain quality following recipe cards, as well as per production, portion control, and presentation standards
  • Complete mis en place and set-up station for breakfast, lunch, and/or dinner service

  • Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures
  • Maintain in order store rooms, fridges and walking fridges

  • Attend and contribute to all staff meetings Departmental and Hotel Training as scheduled and other related activities
  • Respond to any changes in Food and Beverage Division function as per the hotel
