Job Description

As Chef de Tourrier, you will be the specialist responsible for the daily production of laminated doughs and viennoiserie, ensuring the highest standards of quality, consistency, and presentation. Working closely with the Executive Pastry Chef and Pastry Sous Chefs, you will play a key role in delivering exceptional breakfast and pastry experiences while upholding the exacting standards expected at Four Seasons. This position offers structure, stability, and the opportunity to develop your expertise within a supportive and professional luxury kitchen environment.

Job Responsibility

  • Produce laminated doughs including croissants, viennoiserie, puff pastry, and breakfast pastries to the highest standard
  • Manage all stages of lamination, fermentation, proofing, and baking with precision and consistency
  • Ensure all products meet Four Seasons standards for taste, texture, and presentation
  • Maintain a clean, organised, and food safe working environment at all times
  • Support the training and development of junior pastry chefs within lamination
  • Assist with stock control, ordering, and waste reduction

Requirements

  • Proven experience as a Pastry Chef de Partie or a strong Pastry Demi Chef de Partie with a focus on laminated dough
  • Excellent technical knowledge of lamination and viennoiserie production
  • Strong attention to detail and genuine pride in craftsmanship
  • Ability to perform consistently within a luxury kitchen setting
  • A collaborative, professional, and calm approach to teamwork
  • Commitment to continuous learning and refinement of skills
