The Pastry Chef de Partie is an integral part of the Main Pastry Kitchen. This position will work closely with the Pastry Sous Chef and Executive Pastry Chef to supervise and oversee the Pastry Team in the preparation and production of all desserts and pastry items and maintain the smooth running of the operation.
Job Responsibility
To supervise and coordinate the preparation of pastry food items as per guest orders or as assigned by kitchen management in accordance with production requirements and quality standards while maintaining a safe and sanitary work environment
To supervise and coordinate the activities of the pastry employee/s engaged in preparation of desserts, pastries, confections, and ice cream, across the various meal periods
To keep fellow employees motivated by creating a positive work environment
To plan production for the pastry department according to the needs of the hotel and pastry kitchen
To maintain B.E.O. paperwork and order the proper amount of supplies and product needed for the daily operation
To ensure the correct and approved recipe are distributed to the fellow employees
To train the staff using the proper methods of production as approved by the Executive Pastry Chef
To ensure the training and execution of proper usage, maintenance and cleaning of all pastry equipment such as: spatulas, mixers, various knives, blenders, food processors, pastry bags, ovens, sheeter and any other equipment inclusive of work surfaces
To ensure the requisitioning of supplies and equipment and see that they are delivered and properly stored
To participate in the production of all items in the pastry kitchen
Accept full responsibility for managing any activity in the absence of the Executive Pastry Chef and Sous Chef Pastry in a fast paced high quality operation
Requirements
Minimum 2–3 years experience in a similar role
Strong knowledge of pastry techniques, baking, and dessert plating
Ability to work in a fast-paced environment
Creativity and attention to detail
Team player with good communication skills
Flexible to work shifts, weekends, and public holidays
Excellent communication and organization skills
reading, writing, and oral proficiency in the English language
Have good administration and computer skill (Excel, Word)
