Reporting to the Sous Chef, you will be responsible for coordinating daily tasks at your cooking station during the Night Shift. You will oversee the preparation of food items required for overnight production and early service, ensuring consistent quality is delivered in every dish while following recipe cards as well as production, portion and presentation standards. You will be completing mise en place and setting up cooking stations for night service, always maintaining a safe and sanitary work environment as per HACCP, dating food containers and ensuring all perishables are kept at proper temperatures.
Job Responsibility:
Coordinate daily tasks at your cooking station during the Night Shift
Oversee the preparation of food items required for overnight production and early service
Ensure consistent quality is delivered in every dish while following recipe cards as well as production, portion and presentation standards
Complete mise en place and set up cooking stations for night service
Maintain a safe and sanitary work environment as per HACCP
Date food containers and ensure all perishables are kept at proper temperatures
Participate in the preparation of food items according to guest orders
Train, motivate, recommend discipline, and supervise the work of kitchen employees
Operate, maintain and properly clean kitchen equipment
Control food waste, loss and usage per policies
Requirements:
High school education, cooking school or culinary institute education or equivalent experience
At least three years of culinary experience or related work experience in luxury hotels and/or stand-alone restaurants or restaurant groups
Good knowledge of Italian and international dishes, food items and recipe preparation
Ability to multi-task and with excellent organizational skills
Ability to operate, maintain and properly clean deep fryer, boiler, stove, steamer food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill
Proficient knife skills and ability to multi-task
