At The Ritz-Carlton, Melbourne, pastry is not just a course - it's a statement of craftsmanship. We are seeking an experienced and passionate Pastry Chef De Partie to help our pastry team in delivering exceptional desserts for both intimate fine dining and large-scale luxury banquets, on a Full-Time basis.

Job Responsibility:

Support the Pastry Sous Chef in overseeing the pastry kitchen's daily operations
Take the lead in plated dessert and banquet menu development, ensuring elegance and consistency in every service
Demonstrate mastery in working with chocolate, including tempering and artistic presentation
Manage, train and guide a large and diverse team, fostering a culture of excellence and collaboration
Uphold rigorous food safety, allergen management, and hygiene standards
Collaborate cross-functionally with Banquets and Culinary teams to deliver flawless guest experiences
Maintain inventory, support cost control and manage high production volumes
Participate in department meetings and continually communicate a clear and consistent message regarding the departmental goals to produce desired results
Support and assist with new menus, concepts and promotions for the Restaurant outlets and Banquets

Requirements:

At least 3 years of experience in pastry, including team leadership
Prior experience in a luxury 5-star hotel or high-end venue with large banquet operations
Deep technical knowledge and creativity in contemporary and classic patisserie
Strong organisational skills, calm under pressure, with a hands-on approach to service
A natural trainer and mentor who brings out the best in others
Certificate IV in Patisserie or equivalent
Availability to work full-time, across shifts including weekends and public holidays
