Job Responsibility:
Running the breakfast kitchen operation to a consistently high standard, from early morning prep through to service completion
Preparing and cooking a full breakfast menu covering hot dishes, egg cookery, pastries, cold items, and any à la carte or cooked-to-order requirements
Ensuring all mise en place is completed accurately and on time ahead of every service
Maintaining impeccable standards of food presentation, portion control, and quality consistency across every plate
Upholding strict food safety, hygiene, and allergen compliance in line with HACCP standards at all times
Managing stock levels during service, flagging replenishment needs, and minimising waste through accurate prep
Keeping the kitchen clean, organised, and guest-ready throughout the morning operation
Supporting the wider kitchen brigade where required and communicating clearly with front-of-house during service
Contributing to a positive, professional kitchen culture where reliability and high standards are the norm
Requirements:
Proven kitchen experience, ideally with exposure to breakfast or all-day dining operations
Strong egg cookery and breakfast technique, from classical cooked breakfasts to more contemporary à la carte dishes
The ability to work independently and manage a section with confidence during morning services
A thorough understanding of food hygiene, allergen management, and HACCP compliance
Reliable, punctual, and disciplined, breakfast demands a chef who is ready to go from the moment the shift starts
A calm, focused approach under pressure with the ability to maintain quality at pace
A team-first attitude and the ability to communicate clearly with kitchen and front-of-house colleagues
