Lisbon is calling and behind the bar at one of its most talked-about destinations, there's a seat with your name on it. White Rabbit Projects partners with some of the world's most exciting hotel brands to create Food & Beverage experiences that genuinely stand out. At Locke de Santa Joana in Lisbon, we're building something special, a bar programme as vibrant, characterful, and alive as the city itself and we need a brilliant Bartender to help bring it to life. This isn't just a bartending job. Job Responsibility:

  • Craft and serve an exceptional range of cocktails, spirits, wines, and beverages to the highest standard
  • Create a genuinely welcoming bar atmosphere, building real connections with guests
  • Develop a deep knowledge of our drinks menu, including seasonal cocktails, local Portuguese wines and spirits, and non-alcoholic options
  • Support the development and evolution of the bar menu
  • Maintain impeccable standards of bar set-up, cleanliness, and mise en place
  • Work closely and collaboratively with the wider F&B team
  • Handle guest requests, preferences, and any concerns with warmth, grace, and real professionalism
  • Support stock management, including ordering, rotation, and waste reduction
  • Bring great energy and genuine enthusiasm to every shift

Requirements:

  • Proven experience as a Bartender in a quality bar, cocktail bar, hotel bar, or restaurant environment
  • A genuine passion for cocktails, spirits, and the art and science of great bartending
  • Strong knowledge of classic and contemporary cocktails, wine, and bar operations
  • A warm, confident, and engaging personality
  • Good communication skills in both Portuguese and English (additional languages are always a bonus)
  • A meticulous eye for detail and a commitment to consistency, quality, and presentation
  • The ability to stay calm, focused, and positive during busy service, high-volume environments don't faze you
  • WSET or relevant spirits/cocktail qualification is desirable but absolutely not essential, passion and talent matter most
  • Experience in a hotel bar or lifestyle hospitality setting is a bonus
