We’re looking for a Bars Operations Manager to join the Green & Fortune leadership team, playing a key role in shaping, and supporting bar operations across multiple London venues. This role is ideal for someone with a keen eye for detail, creative flair and financial accumen. Creating unforgettable event offers, atmospheric retail spaces and developing the best of the teams capabilities. You’ll work closely with senior leadership and venue teams, with real influence over service quality, menus, and performance.
Job Responsibility:
Oversee day-to-day bar operations across multiple venues, ensuring consistent service standards
Support Bar Managers through regular site visits, audits, and hands-on operational guidance
Ensure full compliance with licensing, health & safety, food hygiene, and responsible alcohol service standards
Build strong relationships with suppliers, stakeholders, and internal teams
Develop, review, and implement drinks menus and concepts
Introduce seasonal, promotional, and innovative beverage offerings
Ensure menus are accurately costed and aligned with commercial targets
Monitor industry trends and competitor activity
Support recruitment, onboarding, and development of bar teams
Coach and mentor Bar Managers and supervisors
Promote a culture of professionalism, accountability, and teamwork
Drive engagement, performance, and retention across sites
Manage margins, cost control, and overall bar profitability
Oversee stock ordering, inventory systems, and stock takes
Reduce waste and improve purchasing efficiencies
Support budgeting, forecasting, and performance reporting
Requirements:
Operate with excellence, driving standards across bars with diligence and understanding of financial control
Be the go-to operator for staff development, training and recruitment
Manage managers, lead by example whilst ensuring all licensing and compliance is strictly adhered to
Be a problem solver and strategic planner
Have experience and knowledge of aspirational London venues to create incredible menus, wow moments and top level events
Be technically proficient with experience in managing POS, stock, payroll and rostering systems, alongside Excel spreadsheet, menu writing and P&L's
Have a keen eye for detail, creative flair and financial acumen
