As Bar Manager, you will take full responsibility for the leadership and operational performance of Booking Office 1869. You will oversee all day-to-day bar operations, ensuring exceptional guest experiences, consistent beverage standards, and strong commercial results. This role requires a hands-on leader with advanced beverage expertise, proven people management skills, and a passion for driving standards, innovation, and team development while upholding the identity and values of the brand.
Job Responsibility:
Lead and manage all bar operations, ensuring seamless service delivery across all trading periods
Set, maintain, and continuously improve beverage quality, consistency, and presentation in line with brand and hotel standards
Ensure full compliance with all health, safety, hygiene, and licensing regulations, maintaining a safe and legally compliant environment at all times
Take ownership of stock control, ordering, inventory management, and wastage reduction to achieve beverage cost and margin targets
Drive financial performance by delivering revenue growth, managing service charge performance, and maximising profitability
Develop and implement sales strategies, upselling initiatives, and promotional activity to enhance guest spend and engagement
Lead menu development, seasonal changes, and cocktail innovation, ensuring offerings remain relevant, creative, and commercially effective
Maintain all bar areas to the highest standard of cleanliness, organisation, and operational readiness, ensuring mise en place is consistently maintained
Recruit, train, coach, and develop the bar team, fostering a high-performance culture aligned with hotel values and service expectations
Oversee cash handling, till management, and financial reporting, ensuring accuracy and adherence to financial controls and procedures
Act as a brand ambassador on the floor, leading by example through exceptional guest interaction, storytelling, and service excellence
Requirements:
Experience in a 5‑star or luxury hotel
