Job Description

As the Bar Manager at Hedwig Bar, you are the heart and soul of our flagship cocktail destination. You are not just managing a bar – you are leading a department. You will be responsible for the complete operational, financial, and creative direction of Hedwig Bar, ensuring it remains a standout destination within Krakow's hospitality scene. This is a senior leadership role requiring a hands-on approach, commercial acumen, and a passion for people and hospitality. You will lead the entire Hedwig Bar team, oversee guest experience, manage stock and financial performance, and drive innovation in our drink offerings. You will also play a key role in shaping the bar's identity, building a loyal guest base, and maintaining the highest standards of service consistent with an Autograph Collection property.

Job Responsibility

  • Oversee all daily bar operations
  • Ensure exceptional guest service
  • Create and manage weekly staff schedules
  • Manage stock levels for all beverages, spirits, wines, ingredients, and bar supplies
  • Ensure FIFO rotation and maintain cleanliness
  • Complete daily opening and closing procedures
  • Check cleanliness and presentation of glassware
  • Design and develop seasonal cocktail and drinks menus
  • Introduce new and innovative drinks
  • Organise tastings, masterclasses, and special bar events
  • Follow global beverage trends
  • Recruit, onboard, train, and motivate the bar team
  • Conduct regular team briefings, training sessions, and performance reviews
  • Foster a culture of excellence
  • Ensure team adherence to HACCP and Sanepid
  • Build strong relationships with guests
