Job Description:

Prepare ingredients for cooking, including portioning, chopping, and storing food. Wash and peel fresh fruits and vegetables. Weigh, measure, and mix ingredients. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist. Prepare cold foods. Operate ovens, stoves, grills, microwaves, and fryers. Test foods to determine if they have been cooked sufficiently. Monitor food quality while preparing food. Set-up and break down work station. Serve food in proper portions onto proper receptacles. Wash and disinfect kitchen area, tables, tools, knives, and equipment. Check and ensure the correctness of the temperature of appliances and food.

Requirements:

  • High school diploma or G.E.D. equivalent
  • At least 1 year of related work experience
  • No supervisory experience
  • No license or certification required

  • Complete mise en place and set up stations, buffets, and plate up for all outlets
  • Ability to ensure consistent production of all baked goods and pastries, ice cream, and confectionery for all outlets, banquets and amenities
  • Manage procurement and ordering processes for the department through Birchstreet, ensuring accuracy, vendor consistency, and adherence to purchasing specifications
  • Ability to train, evaluate, coach, motivate and supervise other pastry employees to ensure that core standards are met
  • Organize and assist with restaurant events (buyouts, outside catering, holiday activations)
  • Ability to communicate regularly with the Pastry Chef to contribute to menu development and recipe creation for the outlets of the resort and custom requests
  • Create and maintain a positive work environment conductive to learning and growth for all team members
  • Create and monitor daily production lists for the team based on event orders, production needs and skill set of each employee
