The BOH Manager is responsible for overall supervision and administration of the F&B Department at their designated properties, including Restaurant/Diner/Concessions and Special Events. The position ensures effective service, high quality products, and compliance with health and gaming regulations while respecting the mission of the Otoe-Missouria Tribe and OMDA.
Job Responsibility:
Supervise and administer the F&B Department at designated properties
Organize department for effective and efficient service with high quality products
Coordinate and control Food and Beverage operations including personnel and procedures
Maintain compliance with Oklahoma State Health Department requirements
Ensure compliance with gaming regulations (NIGC MICS, State Gaming Compact, TICS)
Develop and implement work schedules, performance standards, and training programs
Develop and maintain budgets and financial reports
Coordinate guest & service standards for events (concerts, VIP parties, weddings, catered events)
Handle guest complaints in a timely and professional manner
Approve time for assigned staff and monitor overtime
Monitor departmental activities to ensure compliance with laws and regulations
Maintain Departmental Shift log
Provide leadership and direction to reporting staff
Responsible for selection, training, and performance of assigned staff
Investigate and make decisions regarding operational matters and Team Member disputes
Evaluate means and methods of departmental operations for maximum efficiency
Requirements:
High school diploma or GED
Preference for associate's degree
3 to 5 years experience in food service and personnel management
5 to 10 years' experience as a cook preferred
Knowledge of food and beverage service operations
Ability to develop training and coordinate staff
Ability to maintain health, safety, and regulatory standards
Experience in purchasing and inventory management
Experience maintaining budgets
Customer service and complaint resolution skills
Capable of working flexible shifts including nights, weekends, and holidays
Must be eligible to work in the United States
Must pass a drug test
Must obtain and maintain Otoe-Missouria Gaming License
Must have Driver's License
Must have Liquor License
Must have Safe Serve Certification
Capable of lifting 50 lbs
Nice to have:
Associate's degree
5 to 10 years' experience as a cook
Broad knowledge and extensive experience in cash handling and customer service management
