Job Description:

Join our opening team for a new signature restaurant opening in 2026 at Four Seasons Hotel London at Tower Bridge. The restaurant will be open for breakfast, lunch and dinner, 7 days a week. This is a key leadership position within the restaurant team, responsible for delivering exceptional wine service and curating an outstanding guest experience.

Job Responsibility:

  • Assist in managing the sommelier team and ensuring smooth daily operations
  • Support the development and maintenance of an innovative wine list that complements the restaurant’s culinary vision
  • Oversee wine cellar management, stock control, and supplier relationships
  • Train and mentor junior sommeliers and service staff
  • Deliver personalised wine recommendations and pairings for guests
  • Uphold Four Seasons standards of excellence in service and hospitality

Requirements:

  • Previous experience as a Senior Sommelier or Assistant Head Sommelier in a Michelin-starred or luxury environment
  • Strong knowledge of global wine regions and trends
  • Excellent leadership and communication skills
  • WSET Level 3 or equivalent qualification preferred
  • Passion for creating memorable guest experiences
  • A proactive, hands-on approach with excellent communication and team leadership
  • A desire to innovate and elevate the guest experience through wine
