Job Description:

The Department of Applied Human Sciences at Eastern Kentucky University seeks a nine-month tenure-track faculty member at the rank of assistant or associate professor for Academic Year 2026-2027. The position serves the bachelor’s degree Food and Nutrition program. The position begins August 2026.

Job Responsibility:

  • Teach undergraduate courses in a 4/4 annual teaching load in both concentrations of the Food and Nutrition program: Dietetics and Culinary Nutrition & Food Management
  • Courses may include Medical Nutrition Therapy, Human Nutrition, Community Nutrition, Experimental Foods, and Food Preparation & Composition
  • Maintain scholarly engagement
  • Provide service to the university, community, and profession

Requirements:

  • Earned Ph.D. in nutrition, food sciences, or a related field from an accredited institution at the time of appointment
  • ABD applicants may be considered with evidence of a scheduled doctoral defense that occurs no later than May prior to a Fall appointment
  • Registered Dietitian Nutritionist (RDN) is preferred
  • Successful work experience in the field of dietetics
  • Evidence of prior experience in teaching
  • Applied experience and flexibility in areas of instruction
  • Knowledge of artificial intelligence pertinent to the discipline and/or a willingness to pursue professional development to acquire such expertise

Nice to have:

  • Registered Dietitian Nutritionist (RDN)
  • Successful work experience in the field of dietetics
  • Prior experience in teaching
  • Applied experience and flexibility in areas of instruction
  • Knowledge of artificial intelligence pertinent to the discipline
