This involves prepping the kitchen station, which includes gathering all necessary tools and equipment. A significant portion of the morning is dedicated to "mise en place," a French term meaning "everything in its place." This entails washing, peeling, and chopping fresh fruits and vegetables, portioning ingredients, and preparing items like batters, dressings, and sauces. AM Cooks are then responsible for cooking and preparing food items according to established recipes, quality standards, and specific presentation guidelines. This can range from cooking eggs and breakfast meats to order, preparing pastries and baked goods, and assembling lunch items like salads and sandwiches. Operating a wide array of kitchen equipment is a fundamental part of the job. AM Cooks must be proficient and safe in using ovens, stoves, grills, toasters, microwaves, and fryers.
