The primary responsibility of a 2nd Commis is the preparation and cooking of food according to established recipes and stringent quality standards. This involves a wide range of tasks centered around a specific section or station in the kitchen, such as sauces, vegetables, or grill. A typical day includes meticulously preparing ingredients for cooking, which encompasses portioning, chopping, peeling, and storing food items. They weigh, measure, and mix ingredients to ensure consistency and accuracy in every dish. Operating a variety of kitchen equipment is a core part of the job; this includes confidently and safely using ovens, stoves, grills, microwaves, and fryers. They are responsible for monitoring food quality during the preparation process, testing for doneness, and ensuring all items are cooked to the correct internal temperatures for safety and perfection. Beyond cooking, a 2nd Commis is integral to kitchen maintenance, including setting up and breaking down their work station at the start and end of each service, and diligently washing and disinfecting their area, tools, knives, and equipment to adhere to the highest levels of food safety and hygiene. To excel as a 2nd Commis, candidates typically possess a high school diploma or equivalent and at least one year of related experience in a commercial kitchen environment.
